Yum ……….the olives are out of the brine and into a delicious mixture of home grown olive oil, lemon, garlic and herbs all from the farm.
We hand picked the olives from our grove in May and after a month of fresh water (changed weekly) they were left in a strong brine solution in the shade for the next 5 months. Now that the bitter tannins are out it’s time to have fun; olives in cumin seed and lemon (my favorite), olives in thyme and orange, olives in mixed mediterranean herbs or just plain old olives in martinis!
We have also been bottling up our 2012 olive oil.
